As I mentioned in previous posts I'm pretty big on proteins and also the natural immune boosters. So with these in mind last night for dinner I made Huddo a beef stirfry with Asian greens and Ginger.
The recipe was as follows:
Ingredients:
200g Diced beef
2 pieces of bok choy
2 pieces of pak choy
half teaspoon of freshly crushed ginger
1 clove garlic (crushed)
2 carrots
quarter of a head of cabbage
half a head of broccoli
2 handfuls of bean shoots
1/2 cup mushrooms
1 cup vegie stock
1 teaspoon of soy sauce
1 teaspoon honey
Method:
1)Chop up loosely all the vegies into smallish pieces
2)Place into a saucepan, all vegies, ginger, soy sauce, honey, vegie stock cook on medium with the lid on. Cook until veg are soft.
3)Cook beef in fry pan with garlic and splash of olive oil.
4)Once beef is cooked through put into saucepan with with vegies for 3 minutes. (Option: Leave a couple of pieces of beef out for finger food)
5)Take off heat puree until desired consistency add some baby rice for carbs.
(This should give about 4 servings)
