My Football Team was making me Sad.....So I played in the kitchen instead!

This time of year I'm normally very excited on the nights on the weekend as it is football season (I prefer AFL but will watch NRL also occassionally). I am a very vocal Brisbane Lions supporter and Saturday night was their game up against the new Gold Coast Suns. Right from the first quarter it was looking like the previous Lions games this year... NOT GOOD! (My Brisbane Lions are winless this season) So I decided to just keep an eye on the game from the kitchen and give making some Fish Fingers a go. Once again thanks to Annabel's recipe book. So I marinated the fish in lemon juice and a bit of garlic for an hour. Cut the piece of white fish into diagonal strips. Coated them in flour, egg then crushed cornflakes and this was how they turned out....


I then put the pieces into little snaplock freezer bags (2 in each bag). All they need is to be pan fried on each side until golden. I took 2 with me in a cold bag to the BBQ we went to the next day and cooked them on the hot plate as fingerfood for Hudson before his 'main' my only thing I would say about these was that the coating was quite crumbly and Hudson did made quite the mess, so maybe I'll just keep these ones for home use!

PS: The Lions lost.....yet again!!!
