Lately I've made a few dishes with quinoa and earlier this week I made a dish for Huddo that was a bit of a hit. (Note: They resemble risotto balls)
Ingredients:
1 cup of quinoa
half a sweet potato chopped into small cubes
1 cup of finely chopped chicken breast
2 pears, peeled and chopped
2 teaspoons of cinnamon sugar
breadcrumbs
1 egg
2 tablespoons of flour
Method:
1)In a saucepan cook quinoa (1 cup with 3 cups of water)
2)In a fry pan cook chicken, sweet potato, and pear in a little olive oil. Note: if the pear is quite ripe you will find that will go to mush quite quickly, that's fine!
3)Once the quinoa is cooked add the chicken, sweet potato and pear mix.
4)Combine all together and mix in cinnamon sugar.
5)Cook on low and covered until the sweet potato is soft.
6)Place the mixture into a bowl and refigerate for a few hours until the mix is cool and a bit gluggy.
7)With the cooled mixture, roll small balls in your hands and roll first in the flour, then the egg and finally the breadcrumbs.
8)Repeat step 7 for as many times as you like with the mix to get desired serve. Excess mix can be frozen and kept for another time.
9)Cook in 2cm deep oil on high for 2 minutes. Be sure to drain and cool on a papertowel before serving.
Crunchy on the outside and mushy on the inside......yuuumm! :)
